Macaroons (Vegan, Gluten Free with Raw Option)

These macaroons are so easy to make! Since they don’t require baking, you can pull them together in no time and you may even already have all the ingredients on hand.
I made these with maple syrup this time but coconut nectar in the same amount will work well also and makes the dessert totally raw vegan.

Macaroons (no bake, vegan and gluten free)
Ingredients
Macaroons:
- 1/2 cup almond meal
- 1 cup finely shredded coconut unsweetened
- 2 Tb maple syrup
- 2.5 Tb coconut oil
Dark chocolate:
- 1 Tb coconut oil
- 1.5 tsp maple syrup
- 1.5 tsp cacao powder
Instructions
- Warm the coconut oil so it is liquid (you can do this by placing the container of coconut oil in a bowl of warm water or heating it slighty on the stove). Mix the almond meal and shredded coconut together in a bowl. Add the maple syrup and coconut oil and stir until everything is combined. Roll into balls about 1" in diameter.
- Mix ingredients for the dark chocolate together in a small bowl and stir well until combined. Like before you will want to warm the coconut oil so it is liquid before you mix everything together.
- Dip each macaroon in the dark chocolate. If the chocolate is too liquidy you can let it cool for a few minutes and it will become thicker. I like to dip each macaroon half way in the chocolate and sprinkler a little dried coconut on top. You can also drizzle the chocolate on the macaroons.
Notes
If you are following a strictly raw diet, you can use coconut nectar in this recipe to replace the maple syrup (same amount).
