Macaroons (no bake, vegan and gluten free)

  • Warm the coconut oil so it is liquid (you can do this by placing the container of coconut oil in a bowl of warm water or heating it slighty on the stove). Mix the almond meal and shredded coconut together in a bowl. Add the maple syrup and coconut oil and stir until everything is combined. Roll into balls about 1" in diameter.
  • Mix ingredients for the dark chocolate together in a small bowl and stir well until combined. Like before you will want to warm the coconut oil so it is liquid before you mix everything together.
  • Dip each macaroon in the dark chocolate. If the chocolate is too liquidy you can let it cool for a few minutes and it will become thicker. I like to dip each macaroon half way in the chocolate and sprinkler a little dried coconut on top. You can also drizzle the chocolate on the macaroons.

Notes

If you are following a strictly raw diet, you can use coconut nectar in this recipe to replace  the maple syrup (same amount).
