Springtime is the best time for asparagus. It is in season and at peak freshness. Asparagus has always felt precious to me. There is rareness I associate with it. You can’t just throw a handful of asparagus seeds in the ground and pick delicious asparagus spears a few months later. You have to wait years to get a reasonable harvest! Furthermore, the harvest time is relatively short. Mid May into June (in the United States) is really the sweet spot for getting the best asparagus. You will find it at your nearby farmers’ market and you’ll notice that it becomes more affordable at the grocery store during this time when it is in season.

I’ve been eating a lot of asparagus lately and I nearly always roast it. A little salt and pepper, some olive oil or vegetable broth and a little time in the oven or air fryer and I have one of my favorite dishes. I am happy with a big plate of roasted asparagus as a meal. However, I am aware that there are MANY other ways to prepare it that I have been ignoring for years. I decided to compile a collection of asparagus recipes with a variety of preparation methods. Of course, you will still find roasted asparagus here. I’m not giving that up but I am getting into these new recipes this year for asparagus season.
