  • In a large bowl, combine the flour and baking powder.
  • In a seperate bowl, combine the non-dairy milk, lemon extract, lemon juice and maple syrup.
  • Add the liquid ingredients to the bowl with the dry ingredients and mix well.
  • Once the batter is combined, stir in the chia seeds.
  • Heat a nonstick skillet or griddle (you will know it is hot enough when a droplet of water bounces off the surface).
  • Spoon 1/4-1/2 cup of batter into the pan (1/4 cup for small pancakes, 1/2 for large).
  • Brown pancakes on both sides and serve hot.
