These days, many restaurants offer vegan pancakes and quite a few even offer gluten free pancakes. However, pancakes that are vegan AND gluten free (and soy free and oil free and made without refined sugar)? Those are a little harder to find. Fortunately, these lemon chia seed pancakes are easy and quick to make. Really quick. I had pancakes on the table in 15 minutes and was able to make these with common ingredients I already had on hand.
